ひゅうが丼 (津久見市)
津久見市の津久見港からおよそ14km、豊後水道に浮かぶ島・保戸島(ほとじま)。遠洋漁業の基地として栄えたこの島で、漁師たちが過酷な漁の合間に手早く栄養が取れるようにと考案されたのが、「ひゅうが丼」です。マグロの赤身を、しょうゆ・砂糖・酒・ゴマ・卵黄などが入った特製のタレに漬け込み、あたたかいごはんにのせたシンプルで手軽な一品です。
この料理名の由来には諸説あります。船上で強い風が吹くなかでも火を使わずに食べられることから、風の音を表す擬音語「ひゅーひゅー」が転じたという説や、保戸島からのマグロ船が宮崎県日向(ひゅうが)の港に立ち寄った際に、この調理法を学んだとする説などが伝えられています。
保戸島や市内の飲食店で提供されており、マグロのうま味と少し甘めのしょうゆダレが癖になる味わいです。海鮮丼とはまた違った、漁師町らしい食文化を感じられる郷土料理を堪能してみてはいかがでしょうか。

Hoto Jima is an island in the Bungo Channel, about 14 km from Tsukumi Port in Tsukumi City. The island flourished as a base for long–distance fishing and this led to the invention of the Hyuga–don (red tuna rice bowl) to provide fishermen with a quick source of nourishment during gruelling fishing expeditions. It is a simple dish made up of red tuna marinated in a special sauce made from soy sauce, sugar, sake, sesame seeds and egg yolks, and served over warm rice.
There are several theories as to the origin of the name of this dish. One theory suggests that the name derives from the onomatopoeic term hyu–hyu, mimicking the sound of the wind, because the tuna can be eaten on board without fire, even in strong winds; while another claims that the tuna catching ships from Hoto Jima learned how to cook this dish whilst calling at the Hyuga Port in Miyazaki Prefecture.
The dish is served at restaurants on Hoto Jima and in the city, and the umami of the tuna combined with the slightly sweet soy sauce is very moreish. While in Oita we recommend you give this dish a go! It’s a great opportunity to experience the cuisine of a local fishing town, and has its own unique flair compared to an ordinary kaisen–don (seafood rice bowl).
