ピリッとした辛さと、柚子のさわやかな香りが絶妙に調和する「柚子胡椒」は、諸説ありますが、大分県日田市発祥とされる調味料です。九州地方では「唐辛子」のことを「胡椒」と呼び、青唐辛子・柚子の皮・塩をすり合わせて作られます。焼き鳥や鍋、刺し身に添えると風味がぐっと引き立ちます。
もともとは各家庭で手作りされていた保存食で、果実感のあるものやキリッとした辛さが際立つもの、粒感のあるものなど、作り手によって個性もさまざま。日田市をはじめ、大分の空港や道の駅でも多彩な商品がそろい、選ぶ楽しさも魅力です。少量で料理の味わいをガラリと変える名脇役。いつもの料理をちょっと特別にしてくれるうま味があり、定番の食べ方だけでなくアレンジ次第で幅広く楽しめる一品です。

Yuzu kosho is a seasoning known for its tangy spiciness and refreshing yuzu aroma. Although there are various theories, it is said to have originated in Hita City. In the Kyushu region, ‘togarashi’ (chili pepper) is referred to as ‘kosho’ (pepper). Yuzu kosho is prepared by grinding green chilli, yuzu peel and salt together. The flavour is enhanced when served with yakitori, nabe (hot pot) and sashimi.
Originally used as a preservative to extend the shelf life of food, it was handmade by each household and has a variety of characteristics depending on who made it, from fruity to sharply spicy or grainy. A wide variety of products are available in Hita City, as well as at airports and roadside stations in Oita, making it a fun choice for inquisitive diners. Playing an essential supporting role, a tiny amount can change the flavour of a dish completely. It has a savoury flavour that elevates ordinary dishes to something a little more special, and can be enjoyed in a variety of ways, not only in a traditional sense, but also more creatively in a modern style.
