Saiki City is so renowned for its seafood that the phrase, ‘If you come to Saiki, you have to eat fish’ is often said. ‘Saiki Sushi’ is a local delicacy that lets you enjoy Saiki’s seafood in an authentic way. As you stroll through the city, you can see the traditional noren curtains of various restaurants swaying here and there, creating a unique atmosphere of a port town.
The refrigerated glass display case, typically found at the counter of a sushi bar, is filled with seasonal fish such as yellowtail, horse mackerel, sea bream, kanpachi (amberjack), all of which have been freshly gathered at the local fishing port. The chefs prepare these fish one by one. The fish are firm and fatty after being caught in the rough seas of the Bungo Channel. One of the unique aspects of this area is the diversity of fish species found in the convergence of the warm Pacific Ocean and the cold, nutrient–rich waters of the Seto Inland Sea. This ensures that a rich variety of seafood can be enjoyed all year round.
