大分の食卓で存在感を放つ「白ねぎ」。大分県は質・量ともに西日本を代表する白ねぎの産地として知られています。冬春期は海抜0mの干拓地が広がる豊後高田市を中心とした沿岸部、夏秋期は九重町や玖珠町などの高原地域を中心に栽培することで、年間を通して出荷されています。沿岸部に広がるミネラル豊富な砂地土壌で栽培される大分県産の白ねぎは甘みが強く、冬に旬を迎えます。
鍋やすき焼き、味噌汁の具としてはもちろん、丸ごと焼いて塩で味わうのも通好みの楽しみ方。大分はさまざまな野菜がおいしい地域ですが、「薬味だけじゃない、主役になれる白ねぎ」がその底力を特に感じさせてくれます。
SHIRO NEGI – DEEP-ROOTED SPRING ONIONS / All-Oita
Shiro Negi (deep–rooted spring onions) are a staple on dining tables in Oita. Oita Prefecture is known as the top producer of Shiro Negi in western Japan, excelling in both quality and quantity. They are shipped throughout the year, and farmed in the coastal areas around Bungotakada City, where land reclaimed at sea level spreads out in the winter/spring seasons. In the summer/autumn they are farmed in highland areas like Kokonoe Town and Kusu Town. Oita shiro negi, grown in the mineral–rich sandy soils of the coastal areas, possess a rich sweet flavour and are available in winter.
Shiro negi can be savoured as an ingredient in nabe (hot pot), sukiyaki (thin sliced meat hot pot) and miso soup, or grilled whole with salt, as appreciated by true gourmands. Oita is a region where a variety of vegetables are delicious, but spring onions, which are ‘not only a condiment but can also play a leading role’, are a particular powerful one.
